Grilled Peppercorn Steak and Caramelized Pecan Salad with Cabernet-Cherry Vinaigrette
This is a summer favorite that I served in many restaurants, inspired by my 'oops, the Cabernet wine has turned again in the heat,' moments. This is usually the meal, but it may also be an appetizer salad as well. I offered it as both in my restaurants. The dressing and pecans keep for a few weeks unrefrigerated, and I often make these in bulk in advance for several meals. A simple dish, easily made by any level cook, it is a stylish, beautiful, and delectable entree salad fit for company.
Kraut Bierocks
These meat-and-cabbage-mixture filled sweet rolls make a great main dish, and are also great as a snack. They reheat well, so leftovers are also great! Sauerkraut can be used in place of the cabbage for more of a 'kraut flavor'.
Reuben Crescent Bake

Slow Cooker Philly Steak Sandwich Meat
This crockpot Philly cheese steak recipe uses beef sirloin, but it can be made using lower-grade roasts. The meat is always tender, and makes its own au jus if you like to dip as I do. To serve as sandwiches, put meat on a sub bun and top with sautéed onion and green pepper. Top with Swiss or provolone cheese and broil until the cheese just starts to melt.
