Tofu Parmigiana
Breaded tofu a la parmigiana. You'll just about swear this is eggplant or veal! One of my husband's favorites, and he doesn't even suspect! Serve with a simple crisp green salad, angel hair pasta and garlic bread.

Mushroom varieties noted are suggestions — substitutes based on local availability or preference. A standard mushroom sauce can be prepared by substituting typical grocery store mushrooms for wild varieties.
Polish Gołąbki (Stuffed Cabbage Rolls)
This Polish golabki dish is my grandma's recipe for stuffed cabbage rolls. It is easier to make in large batches since the prep is time-consuming. I double or triple the recipe and bake them in an electric roasting pan. I freeze any extras, and when they come out of the freezer, they taste even better because the cabbage has becomes more tender. My grandma made these with various combinations of beef, veal, and pork and constantly experimented to get them right. I typed this up based on her notes, but she cooked as I do. Experiment with the meats and the flavors until you get something you like. I like to mix up the type of spices I use; sometimes, they are plain with just the marjoram, and sometimes, I use Italian seasoning.
Pork Osso Buco
This pork osso buco with shank isn't as rich as veal, but I like it better. If you want veal, you can use it here, too.
Chicken and Sausage with Bowties
Necessity is the mother of invention. This recipe was created by me because I had a 1 1/2 hour commute to/from work. I have two teenage boys who require a hearty meal to sustain them for at least 1 hour (maybe less). This recipe can be varied; use pork italian sausage if you like (cook longer), veal or pork cutlets or cubes (be careful to cook pork products thoroughly). Serve as a sandwich, skip the pasta, mix with leftover cooked rice; add small green peas or broccoli. I doubt if anything you try will go wrong. Mangia!
Best City Chicken
City chicken is a skewer of pork cubes that are breaded, deep-fried, and then baked to resemble fried chicken. I like to use all pork, but the tradition is to use pork and veal combined. I grew up in Northeast Ohio, and this was my all-time favorite dish when I was little. Now I make this old-fashioned comfort food for my family, and they love it too!
Chef John's Spaghetti al Tonno
Spaghetti al tonno is one of my all-time favorite go-to pasta dishes. I love a classic meat sauce as much as the next half-Italian, but when I want something quick and easy for a weeknight meal, I reach for the tuna. What if you don't like fish? Then this is perfect. The taste and texture is really closer to a veal sauce than one made with fish.
Mom's Spaghetti Bolognese
Mom's spaghetti Bolognese recipe was passed on from my Italian grandfather. The ultimate comfort food. Leftovers freeze nicely! To make this recipe more authentic, you can use a mixture of ground veal, pork, and beef. You can also substitute 1/2 cup of red wine for the balsamic vinegar.
