Pulled Pork Hash
Pulled pork hash is a great way to use up leftovers. Hash is a fast and simple meal. This recipe uses meat from pork shoulders I cooked on my Weber Smokey Mountain smoker last weekend. It's great for a quick dinner or relaxed breakfast. The secret to crispy hash is using precooked potatoes. It goes well with biscuits, too.

Tuna Antipasto Salad Bowl
When the weather gets hot, we make a big salad for supper several times a week. This part antipasto, part tuna pasta salad, is my husband's favorite. With some crusty bread, it is a meal all in itself. It is easily adaptable to your family's preferences. I sometimes add other kinds of marinated vegetables and/or strips of mozzarella cheese or provolone cheese.

My Own Mincemeat Pie Filling
I have used many different mincemeat recipes and created my own mincemeat pie filling, using the most delicious and inexpensive combinations (but really, this recipe is very traditional). You may devise whatever combinations are convenient and affordable for you. Throw in whatever's in season, leftovers you have (cranberry sauce from Thanksgiving, oatmeal from breakfast, old bread, etc.). Mincemeat will take anything, it seems, and still tastes the same—exquisite! So, for Heaven's sake, make whatever changes are thrifty for you, but you may keep the quantities about the same.
Cheap Chicken Noodle Casserole
A mixture of chicken, soup, milk, peas and carrots baked with egg noodles, cheese and bread. My husband hates tuna, so I improvised my mom's tuna casserole recipe. Both he and my brother-in-law love it!
Beef and Wine Soup with Dumplings
Serve with toasted dark rye bread.
Beef Salad Sandwich Filling
Like chicken salad, but with beef! A great way to use leftover roast beef or pulled beef. Even my kids like it, minus the onions. Chopping and mixing all the ingredients together in my manual food processor works really well and saves time. Serve on bread or in pita pockets.
Cold Rice Salad
Either you like it or hate, it but at least try it! Serve with fruit and rolls.
