My landlady in Mexico used to make chilaquiles with scrambled eggs instead of fried eggs. She made her own tortilla chips out of stale flour tortillas. This is a very flexible recipe, so use what you have on hand for this yummy brunch dish.

Verde Chilaquiles
This recipe was something I made up after having some sub-par chilaquiles at my favorite local breakfast place. This is my favorite Mexican breakfast dish and is great for a light dinner as well, serve with refried beans and some pico de gallo and you'll be craving for more! Garnish with more cilantro and sour cream. Great for leftover salsa verde or stale tortilla chips, perfect for a family brunch or other special breakfast occasion.

Oatmeal Pie V
This pie is exactly like a pecan pie with the exception that it has oatmeal in it, rather than pecans. During baking, the oatmeal forms a chewy, "nutty" crust on top For a delicious variation, try the chocolate version. Just substitute 1/4 cup cocoa for the spices; this makes it taste very fudgy.
Cherry-Almond Breakfast Cobbler
Cobbler for breakfast? Why not! Made with slightly-better-for-you ingredients than a traditional cobbler, this variation is a great way to start the day! And don't let the long list of ingredients fool you: it comes together pretty quickly.

Chef John's Spanish Garlic Soup (Sopa de Ajo)
Sopa de Ajo is a wonderfully rustic bread soup spiked with sliced garlic, paprika, and ham. If that wasn't enough to get your attention, it's also topped with eggs poached in a fragrant, brick-red broth. It's like a steaming bowl of breakfast-for-dinner.
Roasted Beets with Goat Cheese and Walnuts
Twice-roasted beets with goat cheese, crunchy nuts, and slightly bitter greens โ that's my idea of an easy, healthy, beautiful fall lunch! Or dinner, or breakfast, or brunch! Serve with toasted walnut bread.
