Seasoned Roasted Root Vegetables
I wanted a vegetable medley with root vegetables good for the fall. I took three recipes and changed them up to get the following recipe. This recipe is good when reheated in the microwave, or I have frozen some and served them later.
Duck Fat-Roasted Brussels Sprouts
A few tablespoons of duck fat and a very hot oven are all you need to turn some sleepy Brussels sprouts into something much more special.
Zucchini with Chickpea and Mushroom Stuffing
A great vegetable dish that can be used as a centerpiece or as a side. Can be lovely when served with tomato based sauce and a green vegetable, or I have even had them with traditional roasted vegetables at Christmas.
Vegan Stuffed Peppers
These vegan stuffed peppers have a hearty roasted buckwheat and tomato filling to make a tasty dish that's also gluten-free, dairy-free, and vegetarian. Serve warm with hot rice and marinara sauce.
Roasted Eggplant and Mushrooms
Eggplant, mushrooms, and zucchini are roasted together with a touch of tomato for a surprisingly robust side dish or sandwich filling.
Roasted Green Beans and Baby Red Potatoes
Fresh green beans and baby red potatoes are lightly seasoned and roasted into an easy side dish you can put together in a snap.
Grilled Corn Salad
This grilled corn salad made with roasted corn, garden-fresh vegetables, and cilantro makes the perfect side dish for any BBQ or hot summer day.
Bone Broth
After bout upon bout of sickness with the start of the school year, a friend showed me her bone broth recipe. This is a great way to use up old chicken, pork, or beef bones (or just go buy some fresh!) that adds tons of amazing nutrients and amino acids to your diet! 10 minutes of prep, a day of your house smelling like a roast, and you have a fantastic, versatile base for soups, stews, and so much more!
Spicy Cajun Asparagus
Asparagus spears are seasoned with your favorite Cajun seasoning and roasted for a super fast and yummy side dish.
Savory Roasted Root Vegetables
This roasted vegetable side dish is a great way to use root vegetables. I think the beets add a beautiful red color to the dish, but if it bothers you to serve pinkish vegetables, substitute parsnips, rutabaga, or any similar vegetable; be creative!
World's Greatest Vegetable Broth
This vegan broth is slightly thick with rich color and full flavor. The broth can be frozen in 1- or 1 1/2-cup blocks for later use. This recipe also leaves you with a bowl full of deliciously cooked vegetables. I love to snack on them!
Cinnamon-Sugar Popcorn
This sweet popcorn recipe makes a lot, so either invite your friends or store it in an airtight container for later. I first tried this when I was visiting my sister in West Virginia. After trying it, I loved it. However, I neglected to ask her for the recipe. Ten years later, I have it, and I still love it! The kids can help make it if you use an air popper (which I did to reduce fat and calories โ there's enough in the butter). I used my deep-dish lasagna pan to cook it in the oven. You can use a roasting pan or a large, deep-dish pan.
