Chipotle Garnet Yams
A spicy kick to sweet potatoes. You can add more chipotles for more heat, or more brown sugar for more sweetness.
Quinoa Salad with Roasted Yams
This is an all-time favorite of my friends and family! Add some roasted beets and Romanesco broccoli if desired.
Coconut, Yam, and Leek Soup
Bursting with flavors of coriander and cumin, the sweet coconut balances the leeks and the gorgeous orange yams that have been browned to perfection. Easy, quick, and totally vegan/vegetarian.
Powerhouse African Yam Stew
Protein from split peas, chickpeas, peanut butter, and red lentils. Low-carb from yams. Sooo yummy, nutritious, and cheap. This makes a large batch, but just try to have some left for the freezer. A winner!
Ube Panna Cotta
Here I've taken ube and made a delicate panna cotta that not only tastes divine, but is shockingly gorgeous too, thanks to its natural purple hue! Ube is a purple yam, a popular sweet treat in the Philippines that's made into jam, cookies, and more.
Ube Milkshake
Make yourself a tasty purple milkshake with the addition of ube, aka purple yam. This ube drink gets its nice flavor from cooked ube.
Purple Mashed Potatoes
Delicious purple mashed potatoes flavored with coconut and lime.
Vegan Butternut Squash Soup
This vegan butternut squash soup has lots of fragrant warm spices. The squash and veggies are simmered until soft and tender, then blended into a creamy, silky soup.
Purple Yam and Coconut Mochi (Ube Bibingka)
Purple yams bring brilliant color to these sweet and chewy coconut mochi cakes. For an extra flourish, you can top them with diced fresh mango. Candied pineapple or dried papaya are also good toppers.
Ube Halaya
A delicious Philippines snack made from the ube (purple yam).
Easy and Delicious Purple Yam (Ube) Cookies
A simple recipe for purple yam cookies. These taste awesome! They're very soft and cake-like in texture. These are dome-shaped once they bake. You can flatten them as desired. This is a flexible recipe. You can add a teaspoon (or more) of baking soda instead of baking powder if you want a thinner cookie. I think you can top these with some white chocolate chips after baking.
Thai-Inspired Roasted Acorn Squash Soup (Vegan)
Roasted acorn squash blended smooth with a mild curry and ginger heat.
