This is a wonderful frittata anytime of day or night. My grandfather used to make frittatas quite often. Instead of finishing a frittata under the broiler he would cook it halfway, put a plate on top of the pan, flip the pan over, and slide the frittata back into the pan to cook the other side. Sometimes a frittata would stick; other times the hot oil would drip on him as he performed this maneuver. It was during these moments that I learned all the really good Italian curse words I still use to this day.

Spread is just a basic sweet and tangy burger sauce with mayo, ketchup, relish, a little sugar, and a little vinegar. The onions are really the stars here - soft, sweet, and jammy. Be sure to serve immediately as soon as the fries are cooked - the residual heat of the fries and the onions is what melts the cheese.
Green Banana Fries
I learned about this when I was in Kenya. I've never tasted better fries nor more nutritious fries. Potatoes aren't that common in Kenya but bananas and roots are. They taste as good as any fast food French fries and are healthier. Green bananas are the healthiest because they have all their vitamins where ripe ones lose most of them because they're too ripe. Green bananas do not have a strong banana flavor at all. It's very deceptive and very healthy. I couldn't stop eating them.

Making restaurant quality fries at home is possible with the Philips Airfryer . One tablespoon of oil and some potatoes is all you need to make these. Coat cut potatoes with oil, place in the basket, and set the timer. That's it!
