Easy Frittata
I love to make a frittata with this classic combination of eggs, bacon and cheese but you can use whatever ingredients you have at hand. It is a wonderful dish to serve at brunch or lunch.
Eggs Benedict
Eggs Benedict is a brunch specialty consisting of hot buttered English muffins, Canadian-style bacon, and poached eggs topped with a rich homemade Hollandaise sauce. Wonderful for Easter, Mother's Day, or brunch anytime! If you're not a lemon fan, start with 1 tablespoon of lemon juice. If you like a tangy Hollandaise, you can add the full amount.
Quick Quiche
This quick quiche is for when you don't have time to make a pastry crust. It is an excellent idea for a quick lunch. You can customize this quiche with other goodies, such as ham, chicken, crab, shrimp, or broccoli.
Oeufs Cocotte (Baked Eggs)
Oeufs cocotte are French baked eggs cooked in cream with ham and cheese. You can make them in individual ramekins or a casserole dish, then bake in a water bath in the oven. Simply delicious served hot with toast or strips of bread to dip in the runny egg yolks.
Spinach and Bacon Quiche
This spinach bacon quiche is the best-tasting quiche I have had in years. A friend of mine made this, and I just had to have the recipe. Great for brunch or for a light dinner with a cup of soup.
Cape Malay Pickled Fish
Pickled fish made with cod and a delicious pickling mixture made with red wine vinegar, brown sugar, chili pepper, garlic, and lots of spices. This dish is traditionally served with hot cross buns or freshly baked bread for Easter in Cape Town, South Africa.
Baked Omelet
This omelet recipe is a little different as it's baked in the oven. It's a great breakfast or brunch for the holidays or any time you have company.

Try this individual quiche recipe for little quiche tarts that are perfect to serve at any party or shower. Or, keep them on hand for fast breakfasts during the week.
Easy Baked Banana French Toast
Save time without the hassle of dipping individual pieces and frying on the stove top. Any kind of sandwich bread will work, and you can add any fruit or cream cheese. I used bananas because it's what I had on hand.
Overnight French Toast II
Make this the night before and enjoy brunch with your kids rather than catering to them! Also great for taking places because the syrup is built-in.
Pumpkin French Toast
On a quest to get my kids to eat more veggies and not just at dinner time, my recipe for pumpkin French toast has now become a family favorite! Drizzle with maple syrup and sprinkle some confectioners' sugar for fun!
Skiers' French Toast
Skiers' French toast is a baked dish that makes its own syrup. You prepare it the night before and then bake it in the morning which makes it great for a crowd at breakfast like a sleepover party or before heading up to the slopes!
