Miso-Glazed Black Cod
This is my take on miso-glazed black cod, made famous by Chef Nobu Matsuhisa. In addition to a taste and texture to die for, this is one of the easiest fish recipes of all time. A couple minutes to make the sauce, some brushing, a short wait, and you're broiling. By the way, I don't like to cook both sides β I like the heat to only penetrate from the top down. This makes for a lovely caramelized top and a super juicy interior. Cooking times will vary, but simply broil the fish until the meat flakes easily and the bones pull out with no effort.
One Pan Orecchiette Pasta
This delicious orecchiette pasta recipe only has a handful of ingredients, is very cheap to make, and most importantly, only uses one pan or pot for the entire procedure. Every year when it's time to go back to school I get inundated with requests from students to post recipes that are super-easy, cost pennies, and require a bare minimum of kitchen equipment β this is one of them!
High-Protein Energy Bites
Standard energy bites recipe kicked up with the addition of protein powder and chopped coffee beans and coconut. Super pre- or post-workout snack. Store balls in freezer or fridge and thaw for use.
Beer Cheese Pretzel Dip
This is a GREAT alternative to chips and dip. I take this everywhere and always get asked for the recipe. It is awesome! It is best served with mini-twist pretzels, but it's also great with veggies.
Cream Cheese Grapes
This is a sweet side dish that works perfectly at a pot-luck picnic. Everyone always loves it!
Gluten-Free Heart-Friendly Carrot Pancakes
Think of these pancakes as mini carrot cakes for breakfast. Don't tell the kids there are carrots in these pancakes, and they will never know. Yummy with just margarine, they are also good with honey or real maple syrup. These pancakes are a good way to add beta-carotene to your day, as well as help the kids get in more veggies.
Slow Cooker Pulled Pork with Root Beer Recipe
This easy slow cooker pork shoulder with root beer is excellent for making delicious pulled pork sandwiches or as an entrΓ©e. Serve over rice or with Hawaiian sweet bread for a yummy little sandwich. I like to top the pulled pork with sliced roasted red peppers, blue cheese, and chimichurri sauce to make a delicious sandwich with Argentinean flavor.
Pressure Cooker Corned Beef
This pressure cooker corned beef is the most tender, flavorful corned beef that you will ever eat! Cooking time includes the time for the pot to reach the proper pressure.
Slow-Smoked Pulled Pork (Boston Butt)
This simple yet effective Boston butt recipe gives the pulled pork a mildly spicy and tangy flavor. The combination of smoke and moisture from the drip pan works very well for cooking the meat evenly and leaves plenty of juices within the meat itself. I've tried several different methods with Boston butt and this one is my favorite, as well as a favorite among my friends. Give it a try and see if you like it, and please don't be shy and leave some feedback! I usually serve with barbeque sauce and baked beans (throwing the fat chunks from the pulled pork into the beans to add a little extra flavor). Check out my Sweet and Spicy Cornbread Muffins recipe for a great side. Enjoy!
Beef and Pork Guiso
My girlfriend's mom, Mama, makes this incredible guiso (stew) once a year and often includes it in a more intricate recipe, which doesn't allow us to appreciate the value of the guiso as is. It is good by itself, with rice or pasta, or with chips. I love it because it's awesome, incredible, and delicious.
Pumpkin-Almond-Date Balls
Festively fall flavor in these nutty date balls! Best eaten within a week.
Pumpkin Cookies with Caramel Frosting
These soft, cake-like pumpkin cookies smell wonderful and are a great reminder of autumn. The recipe came from my great-grandmother and yields a small batch, so we sometimes double it. The caramel frosting is glaze-like and quite thin, so it helps to place the cooled cookies on waxed paper while frosting. I usually use an entire can of pumpkin, rather than letting a small portion of it go to waste. Store in an airtight container for very soft cookies, store in a loosely covered container for firmer cookies.
