Easy Baked Pineapple
This side dish is a family favorite with our Easter ham.
Dandelion Dressing
This is made in early spring, usually Easter, when the new dandelions are sweet and crisp. It is from my grandma, Callie Brosius, who was Pennsylvania Dutch and a great cook. This is usually served with boiled potatoes with ham at Easter.
Old-Fashioned Scalloped Corn

Macaroni Salad
I picked up this recipe from Germany, it is very simple and tasty. For a different taste, omit the gherkins and add 1/4 cup of chopped ham. The basic recipe is also delicious with boiled new potatoes instead of pasta.
Spinach and Mushroom Salad
This spinach and mushroom salad recipe includes a warm and slightly tangy bacon dressing. It's one of my family's favorite ways to enjoy a spinach salad.
Bird's Nest Salad
This salad has all the food groups represented (bell peppers are actually a type of fruit) and would be an adorable addition to an Easter brunch. Garnish with buttered slices of crusty pumpernickel bread.
Deviled Egg Salad with Romaine
It's a salad that tastes like deviled eggs. My family loves it. This is a recipe for a large family, as I have 5 kids. Another experiment that really turned out great.
Springtime Spinach Salad
A springtime spinach salad with strawberries and tossed with other fresh ingredients, real bacon, and hard-cooked eggs, makes a wonderful salad. A sweet, tangy oil and vinegar dressing tops it off!
Best Classic Potato Salad
This classic potato salad is the best. Creamy, tangy, and crunchy, with a hint of spice and sweetness from pickles, it reminds me of my grandmother's potato salad served every Easter, or any time we had barbecue. She always dotted it with olives for a finishing touch, and a perfect briny addition. This is the best classic version of good old-fashioned, Southern-style potato salad. Not too much mayonnaise, with just the right amount of tang! Serve with grilled or smoked meats, it's the perfect side dish.
Instant Pot Hard-Boiled Eggs
These Instant Pot hard-boiled eggs turn out perfectly set every single time for me! The whites are cooked until tender and the yolks are hard without being chalky. If you chill the eggs in cold water after pressure cooking them, they peel easily.
