Saint Patrick's Soup
This soup is the perfect way to transform the last of that corned beef into something different, yet still the same. I purposely set some aside just to make this soup. Feel free to sub beef broth for the vegetable broth but just know it will alter the color of the finished soup tremendously making it not as appealing to the eyes.
Leftover Prime Rib with Mushrooms and Mashed Potatoes
This recipe is a great way to use leftover prime rib with mushrooms and mashed potatoes after the holidays. It's fast, and more importantly, it's easy, and yum, it's so good, especially since I was so tired of rich gravy dishes after the holiday scene.
Beef and Wine Soup with Dumplings
Serve with toasted dark rye bread.
Leftover Beef Vegetable Soup
I use the leftover roast beef and vegetables to make soup whenever I cook a roast. It's a family favorite!
Stuffed Baby Yorkies
These stuffed Yorkies are my take on a favorite pub appetizer: mini Yorkshire puddings stuffed with roast beef and horseradish. These are delicious when served hot with au jus. You can also leave them unstuffed and serve as traditional Yorkshire pudding.
Egg Foo Yung II
Leftover chicken, beef and pork can all be sauteed with mushrooms, sprouts, onion and of course eggs! The accompanying sauce is simple and flavorful.
Leftover Pot Roast Casserole
I made a very large pot roast and gave some to my neighbor. The next day she shared this leftover roast beef casserole recipe she had made with it. It's absolutely delicious and a great idea to use up those leftovers.
Best Beef and Broccoli
I've had this recipe for years. It's a great way to use leftover beef or you can buy an inexpensive cut and do it from scratch. My kids love it because of the soup. Tenderize the steak with a mallet prior to cooking, if desired.
Hot Beef Sundae
We had this at the New York State Fair. When we saw the sign for Hot Beef Sundae, we were curious. Really, it looks just like a hot fudge sundae and when we got home we made our own version.
Stuffed Mexican Peppers
This is a recipe I came up with 20 years ago that has recently won me the grand prize in our paper's holiday recipe contest. It is my family's favorite meal. Serve with tortilla chips on the side.
Leftover Meatloaf Casserole
A quick casserole using leftover ingredients turns meatloaf, pasta, 2 kinds of cheese, and spices into a whole new meal.
Prime Rib Soup
This rich and satisfying prime rib soup is the best I've ever created. Hubby is always excited when I make a prime rib because he knows this soup made with leftovers will follow within a day or two. The ribs are sliced from the prime rib before serving and saved just for this recipe. I always buy a bone-in prime rib because it makes the roast better-tasting, and the ribs are a bonus not to be missed!
