I love cabbage in general and like most sauerkraut recipes, but they can be pretty sour depending on how they're prepared. Sadly I don't remember who gave me this recipe and who deserves the credit since it was pulled from a collection of handwritten recipes I've kept for years. I made it as a side dish for New Year's Day dinner, and it was a complete hit! This is certainly not your typical sour sauerkraut recipe.
Vegan Split Pea Soup
This vegan split pea soup recipe makes a very thick soup. To make it thinner, reduce the amount of split peas or add more water. Depending on the density of split peas, it may take a while for the vegetables and peas to soften, but you can't really overcook this soup; just stir occasionally and add water if it gets too dry. Seasonings can be altered to taste. This soup tastes even better reheated the next day.
