Rutabaga Stew
My mom has been making rutabaga soup for many years and it is by far the best stew I have ever tasted. It is hearty, filling, and inexpensive โ not to mention extremely delicious and fairly easy to make. The hardest and most time-consuming part of this stew is preparing the vegetables. I chop and dice all my vegetables by hand so it can take a little bit more time, but it is very much worth the extra effort it takes. Pork, beef, or venison are all good in this recipe too.
Easy Lentil Soup
My mom made this tomato lentil soup often when I was growing up, and I continued to make it for myself in college. As a busy college student, I don't have much time to eat, let alone cook. This soup is quick and easy to make, and it's incredibly good for you. Even though it's delicious, it's a little dull in color โ make it more appealing by garnishing it with freshly chopped parsley or chives and a lemon slice!
Easter Ham Bone Soup
This soup with cabbage is a great way to use the Easter ham bone.
Mojito Fruit Salad
This unique, refreshing, minty, mojito fruit salad has sensational mojito flavor that's always a big hit.
Sweet Carrot Salad
This salad is sweet and simple - great for a BBQ or a pot luck and best when left to sit for an hour to let flavors meld.
Summer Cucumber Jicama Salad
This summer cucumber jicama salad is light, flavorful, and makes a great starter! It tastes fine as-is, but you can add salt and pepper to taste. Just remember to add all ingredients and mix before adding in the tomatoes, as they are extremely delicate and do not withstand stirring very well once they are cut.
Refreshing Sweet and Spicy Jicama Salad (Vegan)
I made this refreshing vegan sweet and spicy jicama salad as a side dish with some grilled basil chicken and spicy Italian chicken sausages; it was perfect! If you don't like spicy food, just cut back on the Thai chiles. My boyfriend and I loved it!
Fruit Salad with Vanilla Yogurt
This is a recipe that my aunt made for me not long ago, and you can pretty much make it your own by adding your favorite fruits or taking out what you don't like. Also changing the yogurt flavor will change the taste as well.
Grilled Okra Salad
This simple salad recipe for grilled okra and tomatoes is very flexible, you can add or reduce the amount of ingredients to your liking, and even add other ingredients that are not in the recipe.
Winter Fruit and Pasta Salad
You don't have to give up enjoying fresh fruit during the winter season. Just select a colorful variety of fresh winter fruit, mix it all together with just a bit of crunchy celery, add a bright poppy seed dressing, and start smiling.
Tropical Island Fruit Salad
A bright, beautiful, and delicious fruit salad. This goes well with jerk chicken or another island meal.
