Slow-Roasted Winter Vegetables
This is a mixture my husband came up with using what we had on hand in the fall, and it became a favorite. The first effort for these slow-roasted vegetables was on the BBQ, but it works just as well in the oven. Tastes even better re-heated, and makes great addition to soups and pot pies.
Yam and Apple Casserole
Perfect for the Thanksgiving holiday, yams and apples are baked with a sweet glaze.
Candied Yams and Marshmallows
My honey kept asking for candied yams with the orange juice syrup and marshmallows. I couldn't find a recipe, so I made one up. Learn how to make these yams here โ I must say they came out mighty fine!
Easy Candy Yams
In this candied yams recipe, chopped sweet potatoes are baked with brown sugar, caramel topping, and butter, then finished with a layer of roasted marshmallows.
Ube Milkshake
Make yourself a tasty purple milkshake with the addition of ube, aka purple yam. This ube drink gets its nice flavor from cooked ube.
Grilled Yams
My husband never liked yams until I served yams cooked on the grill. The yams create their own glaze while they cook. You can add more herbs and spices to suit your tastes.
Baked Yam Fries with Dip
This is my answer to the oh-so-yummy but very fattening deep-fried yam fries.
Vegan Butternut Squash Soup
This vegan butternut squash soup has lots of fragrant warm spices. The squash and veggies are simmered until soft and tender, then blended into a creamy, silky soup.
Mom's Candied Yams with Caramel
I took my mom's childhood candied yam recipe and added a layer of caramel. It is now a must at every Thanksgiving and Christmas and is often requested with much anticipation by anyone who has had it. One recipe will serve 6, but barely. I promise there won't be leftovers. If you're going to feed 6 or more, I suggest doubling the recipe in a 9x13-inch pan.
Camotes al Horno (Baked Yams)
This camotes al horno is a popular dish from Puebla, Mexico. It has the sweet simplicity of baked yams with butter, honey, and sugar. Serve as a sweet treat on their own, or try them in combination with savory meat dishes for an interesting mix of flavors.
Easy and Delicious Purple Yam (Ube) Cookies
A simple recipe for purple yam cookies. These taste awesome! They're very soft and cake-like in texture. These are dome-shaped once they bake. You can flatten them as desired. This is a flexible recipe. You can add a teaspoon (or more) of baking soda instead of baking powder if you want a thinner cookie. I think you can top these with some white chocolate chips after baking.
Kahlua Sweet Potatoes
We have had this side dish for Thanksgiving and noticed that it is not as filling as the usual pecan-encrusted mashed sweet potatoes. At Thanksgiving that is a good thing!
