Green Papaya Salad
Cucumber can replace the green papaya in this salad recipe.
Japanese Restaurant Cucumber Salad
Simple and easy to make, with a sweet and spicy dressing that adds a refreshing bite. This recipe comes from a lovely, now-elderly Japanese woman friend who was a second-generation immigrant and patiently endured internment during WWII as a young girl. The cucumber salad is similar to sunomo in Japanese restaurants, but a bit more assertive. The ingredients are available in the Asian or ethnic foods sections of most metropolitan grocery stores. If you're diabetic, use sugar substitute instead of sugar with the same results. Original recipe called for 1 teaspoon MSG also.
Appalachian Slaw
A salad version of coleslaw.
Beet Salad
Slightly sweet, this salad would be a classy accompaniment to any party.

Sweet and Tangy Thai Cucumber Salad
This sweet and tangy Thai cucumber salad is a refreshing side to spicy Thai food. I prefer it without hot peppers or peanuts since its major purpose for me is refreshment. It's especially quick to make if you can slice the cucumbers and onions in a food processor.
Mojito Sorbet
This minty mojito sorbet has all the flavors of a mojito cocktail! The optional rum in the recipe helps the sorbet not freeze too hard if being stored in the freezer. Delicious on its own, or mixed with rum for a frozen mojito.
Halloween Fruit Apple Teeth Treats
These are absolutely adorable, pretty easy to make, and the perfect treat to bring to a Halloween party. I brought them to my 2-year-old's school party and they LOVED them, and so did the moms! Use organic apples if possible.
Banana Oat Bread Pudding
One time I had a lot of oats leftover so I made up this concoction in 40 minutes. You can add more sugar or bananas to your sweet delight.
Simple Broiled Grapefruit
Broiling grapefruit makes them a sweet addition to any meal or dessert. This recipe will work with a variety of fruits such as peaches, apricots, or pineapples.
