Buffalo Wings and Blue Cheese Omelet
If you like wings and blue cheese, you'll love this omelet! Also a great way to use up leftover wings or a rotisserie chicken. Drizzle with Frank's RedHotยฎ and if you don't like blue cheese, you can easily swap for Cheddar. Garnish with chopped celery and carrots and blue cheese dressing if you like.
New Colorado Omelet
A fresh and delicious change of pace over traditional omelets.
Asparagus Omelette
Who knew asparagus and eggs tasted so good together? Fantastic for lazy Sunday mornings (that turn into afternoons) or a quick dinner. The Master Omelettier's secret to a gorgeous and fluffy omelette is to cook covered on medium-low until the final step - adding cheese and broiling in the oven for 2 minutes, or until brown. For the fearless cook and the adventurous eater, consider adding some smoked salmon flavored cream cheese. Enjoy with toast or fresh croissants.
Stovetop Omelette for One
Breakfast is said to be the most important meal of the day, and this hearty omelette includes veggies, turkey bacon, and cheese. Serves one hearty appetite or two smaller appetites.
Cast Iron Skillet Vegetable Frittata
This frittata is a delicious balance of eggs, cheese, vegetables, and spices.
Spanish Tortilla
Great for breakfast or brunch. My version of this classic dish combines eggs with delicious potatoes, bacon, onion, and bell peppers in a very short time.
Individual Baked Frittatas
Baked individual frittatas. Feel free to change the ingredients according to your own preferences.
Broccoli-Cheddar Frittata
A frittata is an excellent way to sneak veggies into your family's diet, and in this recipe, the veggie is broccoli. Also, thawed, diced hash brown potatoes speed up the cook time and the prep time, too. If you want more color on top of the frittata, shorten the baking time by a couple of minutes, and use the broiler to achieve the color you want. For breakfast or brunch, fresh fruit or baby tomatoes make a great side.
Bacon and Potato Frittata with Greens
This is a wonderful frittata anytime of day or night. My grandfather used to make frittatas quite often. Instead of finishing a frittata under the broiler he would cook it halfway, put a plate on top of the pan, flip the pan over, and slide the frittata back into the pan to cook the other side. Sometimes a frittata would stick; other times the hot oil would drip on him as he performed this maneuver. It was during these moments that I learned all the really good Italian curse words I still use to this day.
Baked Celery Root Fries
Oven-roasted celeriac sticks are a lovely accompaniment to your main dish or even alone, just for a snack. The light celery flavor goes well with a spicy homemade ketchup. I tried two different methods to achieve the crispiest fries, and this was the one that I preferred. I served it with homemade harissa ketchup.
Freezer-Friendly Frittata
Frozen frittata squares of breakfast goodness reheat nicely for an easy morning meal.
Carne Asada French Fries
French fries topped with my favorite street taco and smothered in queso. Loaded fries don't get much better than this. Don't forget your favorite hot sauce.
