Pannekaken (Norwegian Pancakes)
My Norwegian grandmother made these pancakes for us as a treat, and they continue to be a favorite when my mother makes them for my kids. They're very easy and versatile — serve them rolled like crêpes with syrup or jam. Or serve them for dessert stuffed with sweetened cream cheese and lingonberry jam.
Buckwheat Pancakes
These buckwheat pancakes came about for a few reasons: I get lots of requests for anything breakfast, I'm trying to cook with more whole grains, and I heard someone say it's almost impossible to make a great pancake using 100% buckwheat flour.
100% Whole Wheat Pancakes
These whole wheat pancakes come out very light and fluffy. My kids love them! If you like blueberries, throw a few on top before cooking the second side.
Oatmeal Pancakes
I make these oatmeal pancakes for my kids. The recipe is so simple — the batter with oats and buttermilk is prepared in a food processor or blender, so it's ready to cook in minutes. Serve with syrup and butter or a dollop of applesauce.
Dairy-Free Savory Sausage Gravy
This dairy-free sausage gravy is a fairly basic, large-batch gravy recipe that I've developed over time. The family loves it every time, so the large batch is needed! Normally I'd use soy milk for most things, but I've found that in greater quantities it tends to froth badly. Almond milk does not have this problem though. Serve over warmed biscuits or the toasted bread of your choice.
Pumpkin French Toast
On a quest to get my kids to eat more veggies and not just at dinner time, my recipe for pumpkin French toast has now become a family favorite! Drizzle with maple syrup and sprinkle some confectioners' sugar for fun!
Savory Parmesan French Toast
This savory French toast is deliciously cheesy and easy to make for breakfast or brunch.
Southwestern Breakfast Burrito
This low carb breakfast is quick and easy. This is a tasty breakfast with plenty of protein and fiber. Take the tortillas out of the refrigerator so that can come to room temperature while you prepare the filling.
Sausage and Cheese Egg Boats
These sausage and cheese egg boats might be the best brunch dish ever. They have the same ingredients as a breakfast casserole, but give me the toasted bread outsides any time!
Wholesome Buckwheat Crepes
These gluten-free, lactose-free crepes are not only made 100% with buckwheat, but they use wholesome raw buckwheat groats instead of buckwheat flour, which often has a very strong flavor when not fresh. Soaking the groats before using them develops a lovely texture and a delicious, soft nutty taste. After blending you end up with a smooth batter. These crepes do not crisp up and become golden but they are very pliable and go great with maple syrup, berries, jam, and mashed bananas as filling.
Gluten-Free Buckwheat Crepes
Crepes that can be eaten by those intolerant to gluten. These can be used for either sweet or savory fillings. They can be made ahead of time and reheated when necessary. The batter will stay in the refrigerator up to 24 hours if kept in an airtight container.
Cajun Shrimp Crepes
These crepes are stuffed with a filling of shrimp and vegetables and completed with a creamy white wine sauce. Crepes are easy to make, but if you are pressed for time you can buy them premade.
