Homemade Oven-Baked Breakfast Sausage
Simple homemade breakfast sausage that is baked instead of fried for a healthier option. Bonus is no grease splatter and cleanup is minimal.
Low Fat Apple Bran Muffins
I like to snack on these muffins, they're good, and they're healthy too. Add more sugar if you want it to be sweeter, since these muffins aren't very sweet. Be careful with the milk, sometimes it can be too moist, but you'll just have to bake it for a longer period of time.
Venison Breakfast Sausage
Homemade venison sausage for breakfast.
Delicious Oat Bran Cereal
This oat bran recipe for quick, hot breakfast cereal is sweetened with sugar substitute and dried plums.
Simply Traditional Potato Pancakes
Make easy potato pancakes with hash browns that are already shredded. Grated carrots add a touch of sweetness and a splash of color to these tasty pancakes. Top with applesauce or sour cream if desired.
Lemony Cucumbers
This lemony cucumber recipe is my Grandmother's favorite.
Appalachian Slaw
A salad version of coleslaw.
Japanese Restaurant Cucumber Salad
Simple and easy to make, with a sweet and spicy dressing that adds a refreshing bite. This recipe comes from a lovely, now-elderly Japanese woman friend who was a second-generation immigrant and patiently endured internment during WWII as a young girl. The cucumber salad is similar to sunomo in Japanese restaurants, but a bit more assertive. The ingredients are available in the Asian or ethnic foods sections of most metropolitan grocery stores. If you're diabetic, use sugar substitute instead of sugar with the same results. Original recipe called for 1 teaspoon MSG also.
Green Papaya Salad
Cucumber can replace the green papaya in this salad recipe.
Tomato and Pepper Salad
I make this green pepper salad with fresh tomatoes from my garden. The key is to let it marinate and chill for the flavors to blend.
Sweet and Tangy Thai Cucumber Salad
This sweet and tangy Thai cucumber salad is a refreshing side to spicy Thai food. I prefer it without hot peppers or peanuts since its major purpose for me is refreshment. It's especially quick to make if you can slice the cucumbers and onions in a food processor.
Fresh Frozen Cucumbers
This recipe for freezer cucumbers makes it easy to enjoy "fresh" cucumbers in the winter. It's also a great way to use up all those extra cucumbers from the garden!
